Basic Rice

Serves 4-6 as a side dish. 

  • 1 T butter or olive oil

  • 1 c rice, any variety

  • 1 1/2 - 2 c low-sodium chicken or vegetable stock (base the amount on the package amount for water)

  • 1/2 tsp salt


Melt butter in a medium saucepot with a tight-fitting lid.  Add rice and stir to coat.  Cook rice, stirring frequently, until some grains begin to turn opaque and rice begins to smell toasty.  Add stock and salt, and bring to a boil.  Lower heat to low, cover, and cook according to package directions.  Fluff rice with a fork. 

White rice takes about 15 minutes, brown rice about 40 minutes, and wild rice about 50 minutes.
